What kind of food is fusion catering?

Here it means the dishes are cooked in their own traditions — Caribbean, Indian, Middle Eastern, Mexican, North American — rather than blended into one flavour. The common thread is the kitchen: everything is halal and cooked in the same place.

Can one order cover different tastes?

That is what it is for. A platter is one spread, and swaps between them are normal — most orders end up customised, so a room that wants wraps and a room that wants rice can be the same delivery.

Is all of it halal?

Yes, every dish. There is no non-halal meat in the kitchen, so the Caribbean, Indian and Mexican dishes are halal too, not just the ones people expect to be.
